How we got rollin'

I grew up in California and had the idea of a coffee truck in the mid 1990's, I knew from working 2 jobs, that truck would have been a hit as I personally needed coffee mid-day every day!
I went to Le Cordon Bleu in the early 2000's and developed some skills to go with my love of food.  I watched the food truck industry grow and become a wonderful outlet for so many chefs. I was always eager to try the local trucks when they were spotted out and about.  But, alas, I was growing a family, so I chose to grow them instead of a business. 
Once the kiddos were not so little, I started my research on opening a truck all my own and wanted to cook the foods I loved to eat, and loving the tastes that California offered me, I found myself drawn to some of the amazing Mexican flavors mixed with fresh produce, fish, and vegetarian options that were always prevalent in my area.

Kalifornia Cuisine was born from excitement, eagerness, and the hope to fill your belly with some new flavors and delicious and healthy options that Cali is known for!
